HOW TO CHOOSE AND BUY AN ESPRESSO COFFEE MACHINE part 1

Nice to see you again, today I will share about “How to choose and buy an espresso coffee machine”. Yea yea yea…. I know I know, there is so many articles talk about this issue. But what I want to share is something simple just uses our logic or comment sense. But before we can choose the espresso coffee machine, we need to understand first basic of the espresso coffee machine and use it as the guide.

So…. Let’s start from what is espresso coffee machine? Espresso coffee machine is one machine for brewing coffee use high pressure hot water method. The idea is to squeeze the coffee grinds until all the flavors and chemicals come out and produce the coffee oil, we call crema. And the coffee drink produce from this type coffee machine we call espresso coffee. In modern coffee drinker, espresso coffee is base of other coffee drink menu such latte, cappuccino, mocha, etc. All espresso coffee machines from cheap one until expensive, small size until big size, standard model until super high-end, manual until fully automatic, have 3 important things inside the machines  :

·         Pump
For produce the pressured

·         Solenoid or valve
For maintain the pressured

·         Boiler
For boil the water, they have 2 popular types in boiler one is boiler tank and other one is thermoblock. Boiler tank is like one water tank that have heater inside the tank to boil the water and thermoblock is one metal block that have heater inside the block so when the water pass through the block it will boil. Some espresso coffee machine have more than 1 boiler, depend of the function and specification. 


And they have 4 other things outside the machine :

·         Group head
For lock the porta-filter and from this group head the high pressure hot water come out. They have 1 or 2 or 3 group head in espresso coffee machines.

·         Porta-filter
For hold the basket that use for keep the coffee grind. They have 2 types of porta-filter, for produce 1 shot and 2 shot of espresso coffee (note, for 1 shot the basket will follow for 1 shot basket and for 2 shot the basket will 2 shot basket, meaning the capacity of the coffee grinds in 1 shot will smaller than 2 shot basket). Mostly porta-filter for 1 shot they have 1 spout (the hole that the espresso coffee will come out) and 2 spout for 2 shot. But some of the espresso machines especially small type they only have 2 spout in the porta-filter whether for 1 shot or 2 shot.

·         Steam wand
For produce steam air to frothing the milk. Usually for make other menu coffee drink.

·         Water tap
For produce hot water


Modern espresso coffee machine have 3 popular type :

·         Manual type
From grind the coffee beans, put the coffee grinds inside the basket, tamper, lock into group head, press on the switch button until switch off the button, we need to do it all.

·         Semi automatic
From grind the coffee beans, put the coffee grinds inside the basket, tamper, lock into group head and press on the switch button, we still need to do it but we no need to wait and switch off the button because the machine will automatically switch off after the timing that we are already program reach the time.

·         Fully automatic
In this type we almost no need to do anything, just put the coffee beans inside the coffee beans container in the machine and switch on the button and walaa….. a cup of espresso coffee done. What we need to concern for this type espresso coffee machine have more maintenance concern than other type.
(Note, all espresso coffee machines from cheap one until expensive, small size until big size, standard until super high-end, manual until fully automatic, need maintenance for keep them can work properly)
 
Many of espresso coffee machine manufactures have they own specification and the end it will connect with the price of the machine. Even some of them produce the machine with the latest material or high tech design. So what is the deferent? Is that have connection with the espresso coffee taste? This is a few question (usually) will come out from us about this issue.

From my experience, the answer is like this example, the espresso coffee machine is like car, so basically the main reason car use for bring us from one place to other place in easier, comfortable, faster (if not traffic) or in other word is for transportation. Meaning all cars as long as already have standard it can be use for transportation (the main reason), but they have so many brand with they own specification with deferent price (same like espresso coffee machines). Yes from they are specification they have some reason to follow our need such for driving fast we need buy more power full engine car or for more comfortable or for more luxury or etc. So what happen in the end? The answer is depends us, we buy follow we need or can say follow our own specification. So for espresso a coffee machine is exactly same (now you know my point). All the deferent in espresso coffee machine is just to follow our need such for make a lot of espresso coffee or for convenience or for show off. But for the main reason is same to make espresso coffee, that’s it.                                                                                        Basically as long as the machine already follow the standard, no matter how big the size or price or model or type it will produce same standard of espresso coffee.
(Note, from my experience mostly the quality of the espresso coffee come from the coffee beans, size of the coffee grinds, volume of the coffee grinds in the basket, tamper, timing when brewing and the most important thing quality of the water)

This time I will share with you about “9 reasons why we should buy franchise”. We will talk about why and what kind benefit we got with buys the franchise business. So let’s start with reason number one,

1, No need a lot experience, just need basic experience or skill to run the business
Franchisors or the company will provide all knowledge or know how to run the business, from management, accounting until how the business make money, what we need is just follow all or copy them. So make sure the franchise business we want to buy have all the knowledge or know how to support us when run the business.

2, No need experience to buy or prepare the equipments
Franchisors or the company will provide all equipments or minimum give us the specification from brand until where we can buy the equipments follow they are experience, all of this can make us save a lot of money because we will buy only what the business need and the equipments will be proper standard including we no need worry to be over charge from the sellers or suppliers and it will save a lot of time because we no need to run away just for check or buy the equipments. Not only like that, they will give us the knowledge how to run and maintain the equipments too. What we need is only follow them.

3, No need experience to buy or prepare all raw materials
Same like reason number two, franchisors or the company will provide all raw materials or minimum give us all the specification and where we can buy it. The result will give us a lot of convenience and of course it will save our money and save cost too. Remember in business world save cost meaning margin, more save cost more margin.

4, No need experience to make the recipe
Franchisors or the company should have all recipes and know how to make it, so we only need to follow and copy it. And of course the recipe will work or can be accept to customer base from franchisors experience.

5, No need experience to make the advertising and promotion
Franchisors or the company should have all concepts to make it or when the advertising and promotion need to be prepare, all of that to increase the selling or minimum to maintain it, so we just follow the concept and copy it.

6, No need experience to design or make the places.
Franchisors or the company will provide all the design from interior, furniture, lighting system until the colors scheme follow they are concept to insured all franchise branch have same atmosphere. Even some franchisors will help us to provide the contractors.

7, No need experience to make paper work and administration staff
Franchisors or the company should have all the paper work and administration staff, we only need to copy and follow it.

8, No need experience to managed the staff and raw materials
Franchisors or company will provide all system to managed the staff and raw materials from how many staff we need, how we managed they are holiday or break time, what kind penalty they have if they are wrong, how to managed all raw materials so not become useless until how and when to order the raw materials. All of this has a lot connection with operation cost.

9, No need experience to calculated or prepare the budget
Franchisors or the company should have all calculations the budget we need to build the business, so we will not over budget and kill us.

So, if we see it, buy a franchise business is not only bought some equipments or menu recipe or brand name, buy franchise business is buy full package or the business itself. Like we already mansion on the top, they have many reasons why we buy a franchise business and all reason are positive reason and they will become benefit for us especially for people that want start they are own business but don’t have experience and have limit budget. We can check the budget we need before we really start build the business and we can find which franchise business fit with our budget or dream. We can minimize failed factor and make us become easier to start our own business. What we need is only check where and what kind franchise business that really fit with us. 
My advice keep looking and checking. Do the comparison and always keep asking with a lot of question, you can use all the reason in this article as a guide to ask the question. Used logic to decided, never make decision because big name or brand name from the franchise business, sometimes big or brand name company has high cost in run the business or high operation cost. Another important thing we need to ask about, what kind support they give us or after sales support especially if we have problem in the time we run the business. And how to make customer recognize our place.
My last advice, buy franchise business is not just follow other people or just follow your heart (instinct), buy franchise is about know first what we want and knowledge. No matter big or small, cheap or expensive. If you fail, it wills same meaning “lost money”. If you run well meaning “success”. Remember doing business is not about gambling. Buy franchise is about buy franchisors knowledge or know how, that’s can make us more easier to build and run the business, but the business is belong us (franchisees), so we still need to take care, active and of course work heard before the business stable. There is no magic in hear.

Nice to meet all of you again.
Like usually before I show you how to make iced cappuccino, let talk about what is cappuccino.

Cappuccino is Italian coffee drink prepared with espresso coffee, hot milk and steam foam milk. In traditional and origin (like usually serve in Italy or Europe), cappuccino serve in around 6 oz drink (2 oz espresso coffee + 2 oz hot milk + 2 oz steam foam milk). But mostly in America coffee shop, cappuccino served in around 10 oz to 12 oz drink or even some are more. So if we see it, cappuccino (in origin) is 2 oz of espresso coffee pour with 2  oz of hot milk and 2 oz of steam foam milk, that all. The difference between cappuccino and latte is the volume of the milk and foam milk. So cappuccino or latte or espresso is not the coffee beans, like some people think or assume (especially people not coffee drinker or mostly people in Thailand). Cappuccino or latte or espresso is the way we make and serve the coffee.

Now, let start we talk about “how to make iced cappuccino”, and same like the other type of coffee menu, there is no secret and easy to make it. And same like my latte article, I will show you 2 type of iced cappuccino. One is uses origin base recipe (come from hot cappuccino) and the other one is used or mix with condensed milk (Thai style).




ICED CAPPUCCINO (ORIGIN BASE RECIPE)
·         Make 2 shot (2 oz) of espresso coffee

·         Pour 2 oz – 2.5 oz of fresh cold milk in measuring glass
·         Make the cold foam milk (used pitcher “pump” type or motor type, my recommended used pitcher “pump” type)
·         Pour the 16 oz or 22 oz glass with iced cube until full
·         Pour the espresso coffee in the glass
·         Pour the cold fresh milk
·         Pour the cold foam milk on the top
·         Pour cinnamon topping if you like it
·         Done….. and enjoy your iced cappuccino
(If you like sweet, you can add in some sugar in your coffee and used melted sugar or syrup for the best result)

ICED CAPPUCCINO THAI STYLE
·         Make 2 shot (2 oz) of espresso coffee

·         Pour 0.25 oz – 0.5 oz condensed milk into the pitcher or mixer glass
·         Pour 1.75 oz – 2 oz fresh cold milk in measuring glass
·         Make the cold foam milk (used pitcher “pump” type or motor type, my recommended used pitcher “pump” type)
·         Pour the espresso coffee into pitcher or mixer glass (that’s already have condensed milk)
·         Stir it until the espresso coffee and condensed milk mix or blended together
·         Pour the 16 oz or 22 oz glass with iced cube until full
·         Pour the espresso coffee (already blended with condensed milk) into the glass
·         Pour the cold fresh milk
·         Pour the cold foam milk on the top
·         Pour cinnamon topping if you like it
·         Done….. and enjoy your iced cappuccino
(If you like sweet, you can add in some sugar in your coffee and used melted sugar or syrup for the best result)


So…. Now we know and understand what is and how to make iced cappuccino and same like other coffee menu is easy and there is no secret, what you need is just try it.

Before we start talk about how to make iced latte, let start from what is latte?




Latte basically comes from Italy word and latte is milk. In Italy if we order latte, it will come I glass steamed milk with a layer of foam milk. So coffee latte is coffee with milk. Long long time ago, coffee latte is 1 cup of coffee and 1 glass hot or warm milk. Now in the modern living and mostly coffee shop have espresso coffee machines, coffee latte come with 1 cup or 1 glass, but the recipe is still same, 1 shot (1oz) or 2 shot (2oz) espresso coffee and steamed milk for the rest of the cup or the glass with a layer foam milk. And now mostly people call coffee latte become latte.

So …. How to make iced latte??

Today I will show you how easy to make iced latte and that is no secret too. I will show you two type iced latte, one is original iced latte and the other one is iced latte Thai style (I stay in Thailand and people in Thailand like to drink coffee used condensed milk).

Let start with the original iced latte

·         Make 2 shot (2 oz) espresso coffee

·         Pour 3.5 oz fresh cold milk in the pitcher or measuring glass
·         Make the cold foam milk (used foam milk pitcher or motor type, my recommended use the pitcher type)
·         Basically coffee latte can come with foam milk or without foam milk
·         Pour the 16 oz or 22 oz glass with iced cube until full
·         Pour the espresso coffee in the glass
·         Pour the fresh cold milk in the glass
·         Pour the foam milk in the glass as a topping
·         And done…..  
(If you like sweet, you can add sugar in your coffee and for the best result, used melted sugar or syrup)

“You can just pour the coffee and milk in 16 oz or 22 oz glass, because the volume of the coffee in 16 oz or  22 oz glass is same, the only deferent between 16 oz and 22 oz glass is quantity of the iced cube”


Now I will show you how to make iced latte Thai style

·         Make 2 shot (2 oz) espresso coffee

·         Pour around 0.5 oz to 0.75 oz condensed milk  in the pitcher
·         Pour 2.5 oz to 3 oz fresh cold milk in the pitcher
·         Stir the milk in the pitcher until the condensed milk and fresh milk blend together
·         Make the cold foam milk (used foam milk pitcher or motor type, my recommended use the pitcher type)
·         Basically coffee latte can come with foam milk or without foam milk
·         Pour the 16 oz or 22 oz glass with iced cube until full
·         Pour the espresso coffee in the glass
·         Pour the mix milk in pitcher to the glass
·         Pour the foam milk in the glass as a topping
·         And done…..
If you like sweet, same like the original iced latte, just add some sugar inside the coffee and you can use 16 oz or 22 oz glass






Now you can see, how easy to make original iced latte or iced latte Thai style and there is no secret in there, everybody can make it, what we need is keep practice and do it.

HOW TO MAKE A GOOD ESPRESSO COFFEE

Hii….
This time I want to share about how to make a good espresso coffee and a little bit information about what is espresso coffee. In this time I’m not only write the article but I have the video clip too.

Before I share about how to make, let start from what is espresso coffee. Espresso coffee is a concentrated beverage brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee. And the other words are, espresso coffee is one method to cook coffee where the water is almost boiling in the press with high pressure to the ground coffee so the oils from coffee beans come presented.
So espresso coffee is not the type of coffee bean or coffee roasted. Is about the way or method we brew the coffee. And the method to brew, we need to use coffee machine that we call espresso coffee machine.

Espresso coffee is the base of the other coffee menu such as latte, cappuccino, mocha, Americano and etc.




Step to make espresso coffee :

1, Prepare the coffee bean
·         The coffee beans need to be grinding first. The best size basically depends of the espresso machine and the type of the coffee beans. So for the correct size we need to keep try it.  We can follow the standard  size of the coffee ground is around 25 – 30 seconds time of extraction (time extraction is the time that start to be count from the first coffee out from spout of  porta-filter until stop at the volume we want it “2 oz for 2 shot espresso or 1oz for 1 shot espresso”).

2, Put the ground coffee into the basket at the porta-filter
·         The ground coffees need to put a little bit more than the top of the basket, after that we need to flatten the surface of the ground coffee until flush with the surface of the basket.
·         The quantity of the coffee ground for 1 shot espresso coffee will around 7 – 9 grams and for 2 shot around 14 - 18 grams.
·         Clean the surface of the basket and porta-filter.

3, Press the ground coffee in the basket use tamper
·         For the first tamp we need use pressure around 5 – 10 kg.
·         Used the tamper to knock the head of porta-filter, make sure the ground coffee that not flat (because the first tamp) back to the surface.
·         Tamp again for the second time with pressure around 15 – 18 kg.
·         Clean the surface of basket and porta-filter.

4, Put the porta-filter in the group head
·         Make sure you lock tight the porta-filter with the group head.

5, Put your cup below the spout of porta-filter

6, Turn on the espresso machine and stop it in the volume you want to make
·         1 shot espresso coffee is 1oz volume of the coffee (equivalent around 30 ml).
·         2 shot espresso coffee is 2oz volume of the coffee (equivalent around 60 ml).

7, Enjoy the espresso coffee


Tips to make good espresso coffee :
·         Make sure use good quality of water
·         Make sure the espresso machine and the equipments are clean
·         Make sure the cup for place the espresso coffee must clean
·         Make sure use good quality and fresh of coffee beans
·         Make sure the size of the ground coffee is right
·         Make sure use right size diameter of tamper and the surface of tamper must flat
·         After lock the porta-filter in the group head must directly turn on the machine
·         Make sure the  volume of the coffee is right (1 shot = 1oz, 2 shot = 2oz)

So….
If we see it, there is no secret and difficulty in make espresso coffee. What we need is only try and try or do and do. That all….

In this last part, I will explain about mentality. This is something simple but the main key for you to become success or not fail. Mentality is like booster, that can keep boost you to do everything until your limit. It will make you keep fighting and make you never give up.

Did we realize, how many people surround us that never give up even got so many problem, how many people so easy give up when they meet problem, how many people even they haven’t really meet problem already give up because only hear people surround them talk about maybe they will have or meet the problems. The question is, why have people that so tough, never give up, they keep trying and trying until they are limit? And why have people so easy or always give up? The answer is ……. “Mentality” Yub….. The answer is only one, “mentality” that why mentality is so important and we need them.

The good news, everybody rich or poor, young or old, healthy or unhealthy can have mentality because is free and nobody can buy it. It’s come from your mine and thinking. The only tools you need is thinking it and build it from your mine and keep remain it to make become stronger and stronger. So what kind thinking and mentality we need?

Many people when we ask them the reason why they are open coffee shop, the answer mostly “I want have coffee shop or I like drink coffee or I want start business”. If we see it, mostly they say want or like. This is not a strong word and because the only reason is “want or like”, means in they are mine for those people is not to show really want to do it. It will deferent if they say “I want have coffee shop and I committed to make it happen or I like drink coffee and I commit to make coffee shop or I want start business and I commit to do it”. Word of commit means really will do it, no matter how and they will keep try many thing until success or they are limit. With commit, they are mentality will keep boost them to keep trying until success or they are limit.

My advice, before you start to build your coffee shop, even before you start make the business blue print, start from build your mentality. Rethinking are you just only want or like or (really) commit with the coffee shop. If you haven’t committed, better postpone to build the coffee shop even just only the small one. If you are already commit, keep remain yourself every day. It will make you have strong mentality. You can make the mentality more strong too with read or watching movie about people success story. No matter the success story in the sport or life or etc.

CONCLUSION Build the coffee shop = build business, that why we need to plan it and prepare it like we build the house, and we need prepare our mentality too. No matter how big or small the coffee shop we need all of this in one package to make it success or minimum not fail. Remember, no matter how big or small the coffee shop if fail it will be same meaning = losing money and if success, it will be same meaning too = make money. With planning we will know how to solve problem until how to make it grow. That why many people buy franchise business, because buy (real) franchise business = buy they are knowledge and systems from a to z. Means they no need to prepare everything. What they need only budget and mentality, after that just copy it and follow it. It’s so easy. The only problem is how to choose the right franchisee….. My simple tips, read all this articles, used the information to check the franchise and ask them from A to Z.

•No or poorly business plan and management, cash flow, over cost, no or lack of advertising

All of this issue I write in one because they are connected each other. Before we start open the coffee shop, we need to make the business plan including the management system. This important because this is your blue print in run the coffee shop, you will need to plan everything from how you make people can recognize your place and become your loyal customer. What kind planning you have if your business in the situation not so many customer or if in the good situation, how you maintain it. How you grow the business is another issue you need to plan it. After you already have the main business plan, you need to plan about the management system.

Management system meaning how you manage everything like how your work system, staff (if have), stock, cost, cash flow and promotion. Without this everything will start mess up, your work become unprepared, your staff will uncontrolled and they will difficult to give the best performance. Your stock will uncontrolled and you will lost a lot of money because over stock (don’t forget mostly stock in beverage have expired time) or if you not enough stock, will cost you in run the business (the bottom line can make customer disappointed and lose them). Then if everything messes up, you can’t control the cost. Your business will become high cost and it will start make more problems. One of that your cash flow will start have problems too. The question is, how we can run the business without enough or empty cash flow. How we can do promotion or advertising if we don’t have any budget to do it. And without promotion or advertising how we can promote to make people recognize our place and become our customer. And the end he business will become more bad and the bottom line the business (coffee shop) will fail and close.

My advice, does your big homework before you open the coffee shop. Open coffee shop is very easy as long as you have the budget, the problem is how to run the business to become success or not fail. No matter how big or small the coffee shop, we need the business plant and management system if we don’t want to be failed. Remember no matter big or small coffee shop, if fail it will be same = losing money. If we not understand how to do it, ask people that expert in this line, read books or maybe follow seminar (if have). All of this is not difficult, just use your time and everybody can do it if they want to do it. My tips when you make the business plan and management systems “always use common sense, make it simple but detail and friendly use”.

Next time I will continue about reason part 4, one reason look like so simple but one of the main key to make your business can success or not fail.

Hii… again

In reason number two, I will explain about business knowledge. Yea yea yea …. I know I know, maybe a lot of you will say I know how to do the business or I’m just small coffee shop so no need any business knowledge. Well, I’m understood what you are thinking. I just hope you will keep read all the explanation and I believe you will know how important this knowledge and what is the deferent.

• Location
This issue I write in business knowledge reason because location is about knowledge, is not like mostly people think, if many people in that area meaning good location and the end many people want that area and make the price become so expensive. Did we realize how many businesses fail in location that so many people in there. Why they are failing? What happen with them? And did we see how much business success in the area that not so many people in there. If we see, this problem means many people not means good location. Off course if the location has many people, will have more opportunity to get the customer. But the real issue is how to make all the people recognize your place and become your customer. And if we are already know how to generate all the people to recognize our place and make them become our customer, meaning we can success in any area we stay. My advise do your homework before decide which location you will open your coffee shop. Check all detail and ask people surround there. Don’t only here from other people, just do it yourself. Do the compare with many locations, remember location is not only place you will open the coffee shop or we like the location or not, location is about cost and will become a part of your business plan. And the end is one important thing that gives you to decide many things in your business, like how much you need to put the price or how many target you need to reach. Even you can see and decide the businesses can be success or not if you open in the area you want or like, before you really open it.

I will continue the explanation about “no or poorly business plan and management, cash flow, no or lack of advertising” in the next time. So see you all ……

WHY DO COFFEE SHOP FAIL part 2

Hi…..
Before I explain more about detail in part 1, let me explain first that all the reason is come out in one package, means we must provide everything in one package. We cannot do it only some of them if we want the coffee shop success or minimum not fail. So let start with reason number one :

·         Poor quality, poor service and unfriendly staff
Poor quality, we must know and understand what is good quality coffee and other product (if we serve other beverage or things). We must ensure that the product is better than other competitor or minimum same quality with them. My advice, always keep learning about the product we have and learn other competitor product too.                                                                                                                                              


Poor service and unfriendly staff, we must ensure that our self and our staff (if have) always give the best service and friendly to all customer. We can create our special or unique service style so can make the customer can see and feel the deferent than other competitor. My advice, learning and don’t be afraid to try something new. And never give customer fact friendly, customer can feel it and hate it.

·        Over priced or under priced products
We must concern and know about our products and competitor products priced. Don’t charge more because we have high cost in the business (I will explain about “high cost in part 3). Under priced can make us lesser margin and the worst things can make customer not believe or thinks our products is not good enough for them. My advice, concern every details in the business and products. Keep trying new things to make good products and service in low cost.

·        Dirty place or bad atmosphere and environment
Everybody doesn’t like dirty place, bad atmosphere and environment. So do your jobs to make your place always clean, cozy atmosphere and friendly environment because everybody like it and the end can make everybody want to keep coming. My advices, concern about all details and always remember your place is for customer so try to always give customer like or needs not your needs.

·        Dirty and unhygienic
Everybody doesn’t like dirty and unhygienic too. So do your jobs too, to make everything clean and hygiene. Always put high standard in there. My advice, keep see the details. Don’t stop and think that you are already enough or already have the standard.
